Recipe: Lucky Charm Bird Nest Treats

Ever since Squishy started school we've been doing a lot of cooking.  While it can be time consuming, and messy, to try to cook with a three year old, it also has a ton of benefits.
  • Teaches her how to cook
  • Teaches her how long it takes mommy and daddy to make the food she refuses to eat
  • Teaches basic math skills (counting, measuring, fractions)
  • Teaches patience
  • Teaches how to follow directions
  • And helps to teach kitchen/oven safety
Last week we made some delicious apple muffins that I'll probably share with the blog later on.  I forgot to take pictures this go around :(  It corresponded  with reading Apple Farmer Annie.

This week we read Who Took the Farmer's Hat so we made bird nests.  Her teacher supplied a suggested recipe to make bird nest snacks but I of course had only two of the gazillion ingredients and I avoid taking both small children to the store unless absolutely necessary so we had to make do.  Instead, we made a slightly less healthy version with snacks we had at home.

Munchy Monday: Zucchini Bread

Yes, yes I'm aware it's no longer Monday; but, I made the bread on Monday so it counts :)

For the past few months hubby and I have been getting a fresh produce (primarily veggie) box once a week.  It's been interesting trying to come up with ways to use the produce and some weeks we are better at it than others.  This past Tuesday we got two zucchinis in our box so I decided to give some zucchini bread a try.

I modified a recipe I found to make it my own and it turned out ahh-mazing.  I highly recommend you make it.  Unfortunately, I didn't even think of the blog as I made it so you only get a picture of the finished product and the recipe this week.

Cookies & Cream Cupcakes

So I made some very delicious Cookies & Cream cupcakes last night and I thought I'd share my recipe with you.  Heads up these cupcakes are really dense.  I like these ones like that; but, if you don't, modify the recipe accordingly.





Ingredients:

  • 1/3 of a regular package of oreos crushed
  • 1 cup white sugar
  • 1/2 cup butter
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1.5 cups all-purpose flour
  • 1.75 tsp. baking powder
  • 3/4 cup of milk

Munchy Monday - Lasagna Roll Ups

Yes, I know it's not Monday as the title would lead you to believe; but, I woke up before six, drove 4 hours, and had a cranky, sick baby to contend with yesterday.  Forgive me :)  Anywho, what is Munchy Monday you ask?  I've decided that I'm sick of cooking and baking the same things over and over again.  Especially since I've found so many cool recipes via Pinterest and stumble upon.  So, for the summer (possibly longer) I've decided to challenge myself and try a new recipe every Monday and chronicle it here.  This week it was Lasagna Roll Ups courtesy of homemade by holman
